What Makes a Chocolate Bar Premium?

Short answer: A chocolate bar is premium when four things are true: the cacao is traceable and well-fermented, the ingredient list is short and free of vegetable fat, the bar is properly tempered so it snaps cleanly and melts smoothly, and it was made recently enough to still taste of the bean. Price and packaging tell you very little on their own.
The ingredient list is the fastest test
Turn the bar over before you do anything else. A well-made dark bar usually lists three or four things: cacao beans, sugar, cocoa butter, sometimes vanilla. A milk bar adds milk powder.
The signals to watch for are vegetable fat or palm oil replacing cocoa butter, which is a cost decision that changes the melt, and a long additive list, which usually means the base chocolate needs help.
Lecithin is not a red flag on its own. It is an emulsifier used in tiny quantities, and plenty of excellent bars include it.
Snap and melt tell you about tempering
Break the bar near your ear. A properly tempered bar gives a clean, sharp snap and has a glossy face. A dull surface, a soft bend or a bar that leaves grease on your fingers points to poor tempering or heat damage in transit.
Then let a piece melt on your tongue without chewing. Good chocolate melts evenly and clears. A waxy coating that lingers is usually the vegetable fat again.
Cacao percentage is information, not a grade
Percentage tells you how much of the bar comes from the cacao bean — it says nothing about quality. A 85% bar made from poorly fermented beans will taste harsh and flat. A 65% bar from good beans can be far more interesting.
Use the number to set expectations about sweetness and intensity, then judge the bar on flavour.
Freshness matters more than people expect
Chocolate does not spoil quickly, but it does fade. Aromatics soften over months, and chocolate readily picks up odours from whatever is stored near it.
A maker who prints a production or best-before date is telling you they expect you to care about this. That is a good sign.

We work in small batches, keep ingredient lists short, and print dates because we would rather you ate the bar this month than kept it in a drawer.
